Instructions
In a large bowl, combine rolled oats, almond butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
Add in the ground spices: cinnamon, ginger, cardamom, cloves, and salt. Stir until the mixture is evenly distributed.
Fold in the shredded coconut, chopped nuts, and chia seeds, mixing well until all ingredients are incorporated.
Refrigerate the mixture for about 20-30 minutes to make it easier to handle.
After chilling, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls.
Place the energy bites on a parchment-lined baking sheet or plate and chill for another 10-15 minutes to firm up.
Once set, store the bites in an airtight container in the refrigerator for up to a week. Enjoy them as a quick snack or energy boost anytime!
