Instructions
In a large skillet, heat the olive oil over medium heat.
Add the ground chicken to the skillet, cooking for about 5-7 minutes, stirring frequently until fully cooked and browned.
Once the chicken is cooked, add the chopped red bell pepper, grated carrot, and the white parts of the green onions to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.
Pour in the sweet chili sauce, soy sauce, grated ginger, lime juice, and sesame oil. Stir to combine all the ingredients evenly and cook for another 2-3 minutes until everything is heated through. Season with salt and pepper to taste.
Remove the skillet from heat and let the mixture cool slightly.
To serve, take a lettuce leaf and spoon a generous portion of the chicken mixture into the center.
Garnish with the remaining green onion slices and chopped cilantro if desired.
