Instructions
In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a mixer or whisk to blend until smooth and creamy.
Lay out the bread slices on a clean surface. Using a rolling pin, flatten each slice to about 1/4-inch thick.
Spread a generous layer of the cream cheese mixture evenly over each flattened slice of bread.
Evenly distribute the sliced strawberries across the cream cheese layer. Add chopped mint leaves if desired for a refreshing twist.
Starting at one end, carefully roll each slice of bread tightly into a log. Repeat with all the slices.
Once rolled, slice each log into bite-sized pieces. If using, sprinkle some granola inside each roll before cutting for added texture and crunch.
