Instructions
Begin by cooking the rice noodles according to package instructions. Drain and set aside.
In a large wok or skillet, heat the vegetable oil over medium-high heat.
Add the minced garlic and ginger, sautéing them for about 30 seconds or until fragrant.
Toss in the sliced red bell pepper and sugar snap peas, stir-frying for about 3-4 minutes until they begin to soften.
Add the cooked noodles to the pan, stirring to combine with the vegetables.
Pour in the soy sauce, sriracha, and sesame oil, mixing well to ensure the noodles are evenly coated with the sauce.
Continue to stir-fry for another 2-3 minutes or until everything is heated through and flavors meld together.
Remove from heat and fold in the chopped green onions.
Transfer to a serving dish, garnish with sesame seeds and fresh cilantro.
Notes
Adjust the sriracha to your spice preference.
