Instructions
In a medium bowl, mix the diced chicken with chipotle powder, smoked paprika, garlic powder, onion powder, salt, and pepper until the chicken is evenly coated.
In a large skillet over medium heat, heat olive oil. Add the seasoned chicken and cook for about 8-10 minutes until the chicken is cooked through and golden brown, stirring occasionally.
While the chicken is cooking, prepare the bowl base. In a bowl, layer the cooked brown rice as the foundation.
Top the rice with black beans and corn, spreading them evenly across the bowl.
Once the chicken is cooked, add it on top of the beans and corn.
Garnish the bowl with sliced avocado, pico de gallo, and shredded cheese.
Finish by adding fresh cilantro on top and serve with lime wedges on the side for an extra zing.
