Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
In a mixing bowl, toss the sliced apples with lemon juice and 1 teaspoon of cinnamon. Spread the apples evenly in the bottom of the greased baking dish.
In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the flour, baking powder, baking soda, salt, and vanilla extract to the butter mixture. Mix until combined and you have a thick batter.
Spoon the batter over the apples, spreading it gently but evenly to cover them.
In a small bowl, mix together the 1 tablespoon of cinnamon and 1 tablespoon of sugar. Sprinkle this mixture over the top of the batter.
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cobbler to cool slightly before serving.
Notes
Serve warm with vanilla ice cream for an extra treat.
