In a mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), pumpkin spice, vanilla extract, ground flaxseed, and a pinch of salt.
Mix the ingredients together until a sticky dough forms. You can use a spatula or your hands to ensure everything is well incorporated.
If using, fold in the mini chocolate chips for an extra treat.
Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
Place the energy bites on a baking sheet lined with parchment paper.
Once all the mixture is formed into balls, refrigerate the energy bites for at least 30 minutes to firm them up.
After chilling, transfer the energy bites to an airtight container for storage.
