Instructions
Preheat your oven to 350°F (175°C) and grease a doughnut pan with cooking spray.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
In a separate large bowl, combine the sugar, vegetable oil, and egg. Mix until smooth and creamy.
Stir in the buttermilk, vanilla extract, and peppermint extract into the sugar mixture until blended.
Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
Transfer the batter to a piping bag or a zip-lock bag with the corner snipped off. Pipe the batter into each doughnut mold about 2/3 full.
Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
Let the doughnuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip the cooled doughnuts into the melted chocolate, allowing any excess to drip off.
While the chocolate is still wet, sprinkle crushed peppermint candies generously over the tops of the doughnuts.
Allow the chocolate to set completely before serving.
