Instructions
In a medium-sized mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Mix well.
In another bowl, whisk together the creamy peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
Gradually pour the peanut butter mixture into the oat mixture, stirring continuously until fully incorporated.
Fold in the dark chocolate chips and any optional ingredients like shredded coconut or chopped nuts. Ensure everything is evenly distributed.
Chill the mixture in the refrigerator for about 30 minutes to help it firm up, making it easier to roll into bites.
Once chilled, use your hands to roll the mixture into bite-sized balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper.
After rolling, you can optionally roll the energy bites in shredded coconut or chopped nuts for added texture.
Store the energy bites in an airtight container in the fridge for up to a week or freeze for longer storage. Enjoy!
