Instructions
In a large mixing bowl, combine the drained chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, and sliced olives.
Gently fold in the crumbled feta cheese, chopped parsley, and mint until evenly distributed.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss everything gently until well mixed.
Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
Notes
Serve in a large bowl or platter, garnished with extra olives, feta, and mint.
