In a medium bowl, combine the coconut milk, almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Stir well to fully incorporate the chia seeds.
Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow it to sit for at least 4 hours or overnight for the chia seeds to expand and form a pudding-like consistency.
Once the chia pudding is ready, remove it from the refrigerator and stir it gently to break up any clumps.
Layer the chia pudding into serving glasses by spooning a layer of chia pudding, followed by a layer of diced mango, and then another layer of pudding. Repeat until the glasses are filled.
Top with additional diced mango and a sprig of fresh mint for garnish before serving.
