In a large mixing bowl, combine rolled oats, shredded coconut, and the optional chia or flaxseeds. Mix well to evenly distribute.
In a separate bowl, mix together the almond butter, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt until smooth and well combined.
Pour the wet mixture over the dry ingredients in the large bowl and stir until everything is combined and the oats are well coated.
If the mixture is too sticky, add a little more shredded coconut or oats until it holds together but is still malleable.
With clean hands, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Place the energy bites on a lined baking tray or plate, and refrigerate for at least 30 minutes to firm up.
Once set, transfer them to an airtight container.
