Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine ground chicken or turkey, breadcrumbs, Parmesan cheese, green onions, egg, minced garlic, minced ginger, black pepper, and salt. Mix until just combined, being careful not to overmix.
Using your hands, form the mixture into small meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
Drizzle a tablespoon of olive oil over the meatballs to help them get crispy, then bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and golden brown.
While the meatballs are baking, prepare the Honey Sriracha sauce. In a small saucepan over medium heat, whisk together honey, Sriracha sauce, soy sauce, rice vinegar, sesame oil, and water. Bring to a simmer and let it cook for about 5 minutes, until slightly thickened.
Once the meatballs are done, remove them from the oven and toss them gently in the Honey Sriracha sauce until well coated.
Serve the meatballs warm, garnished with extra green onions or sesame seeds if desired.
