Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, grated carrots, minced garlic, milk, beaten egg, oregano, salt, and black pepper. Mix well until all ingredients are integrated.
Shape the mixture into a loaf form and place it in the prepared baking dish.
In a separate bowl, whisk together the honey, ketchup, soy sauce, and apple cider vinegar to create the glaze.
Pour half of the glaze over the meatloaf, spreading it evenly. Reserve the remaining glaze for later.
Bake in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
During the last 10 minutes of baking, brush the remaining glaze over the meatloaf for an extra shine and flavor boost.
Once cooked, remove from the oven and let it rest for about 10 minutes before slicing.
Slice and serve hot, garnished with chopped parsley if desired.
