Ingredients

crumbled feta cheese

chopped fresh parsley for garnish
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, dried oregano, garlic powder, salt, and pepper. Whisk until well blended.
Add the cauliflower florets to the bowl, and toss well to coat them evenly in the lemony mixture.
Spread the coated cauliflower on a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, flipping halfway through.
Once roasted, remove the cauliflower from the oven and sprinkle the crumbled feta cheese on top.
Return to the oven for an additional 5 minutes, just to warm the feta.
Remove and garnish with fresh chopped parsley before serving.
Notes
Serve warm as a side dish or a light main course.
