Add the minced garlic, oregano, paprika, salt, and pepper to the bowl. Toss everything well until the zucchinis are evenly seasoned.
Arrange the zucchini slices in a single layer on the prepared baking sheet. Make sure not to overlap them, as this will ensure even baking.
Sprinkle the grated Parmesan cheese generously over the zucchini slices.
Bake in the preheated oven for about 2 hours, or until the chips are crispy and golden brown. You can flip them halfway through the baking time for even crispness.
Once done, remove from the oven and let them cool slightly. Garnish with fresh parsley if desired before serving.
