Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a large bowl, whisk together the olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
Add the sliced zucchini, bell pepper, red onion, cherry tomatoes, and button mushrooms to the bowl. Toss the vegetables in the marinade until they are well coated. Let them marinate for at least 20 minutes while the grill heats up.
Preheat your grill to medium-high heat.
Thread the marinated vegetables onto the skewers, alternating between different veggies for a colorful presentation.
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
Remove the skewers from the grill and serve hot, with any remaining marinade drizzled over the top if desired.
Notes
Soak wooden skewers in water for at least 30 minutes before grilling.
