Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float to the top, usually 2-3 minutes. Drain and set aside.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
Add the cooked gnocchi to the skillet, stirring to coat them in the garlic butter. Cook for about 2-3 minutes until they are lightly golden brown on the edges.
Stir in the fresh spinach and red pepper flakes (if using), cooking until the spinach wilts, about 2 minutes.
Season with salt and pepper to taste. Remove from heat and add the grated Parmesan cheese and lemon zest, tossing gently to combine.
Serve hot, garnished with chopped parsley for a fresh touch.
