Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract and peppermint extract, mixing until well combined.
Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined.
Fold in the semi-sweet chocolate chips and mint chocolate chips until evenly distributed.
Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie as they will spread.
Bake in the preheated oven for 10-12 minutes, or until the edges are firm and the tops look slightly cracked.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
If desired, sprinkle the cookies with crushed peppermint candy while they are still warm for an extra festive touch.
