In a separate bowl, mix the maple syrup, melted coconut oil, and vanilla extract until well combined.
Pour the wet mixture over the dry ingredients and stir thoroughly until all the dry ingredients are evenly coated.
Spread the granola mixture evenly onto the prepared baking sheet, pressing it down with a spatula to create a compact layer.
Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it, as ovens vary! The granola should be golden brown and fragrant.
Remove from the oven and let it cool completely on the baking sheet; it will crisp up as it cools.
Once cooled, break the granola into clusters and stir in the dried cranberries or raisins if desired.
