Instructions
In a medium-sized bowl, combine the rolled oats, chia seeds, salt, and maple syrup.
Add the coconut milk and vanilla extract to the dry ingredients, stirring well to combine.
Fold in half of the diced mango, saving the remainder for topping later.
Transfer the mixture into individual jars or a large container with a lid.
Seal the jars or container and refrigerate overnight (or at least 4 hours) to allow the oats to soften and absorb the liquid.
In the morning, stir the oats to combine. If the mixture is too thick, you can add a splash of coconut milk to achieve your desired consistency.
Serve the oats in bowls or jars, topped with the remaining mango, a sprinkle of shredded coconut, and fresh mint leaves for added freshness.
Notes
Adjust the sweetness with maple syrup according to your taste.
