Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray.
In a large bowl, toss the cut sweet potatoes with olive oil until evenly coated.
In a small bowl, mix together the sugar, cinnamon, salt, and cayenne pepper (if using).
Sprinkle the cinnamon sugar mixture over the sweet potatoes and toss until all fries are well-coated.
Spread the fries out in a single layer on the prepared baking sheet, ensuring they are not overlapping.
Bake for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
Remove from the oven and let cool for a few minutes. Optionally, sprinkle with a little extra cinnamon sugar while warm.
Notes
For an extra kick, add cayenne pepper to the cinnamon sugar mixture.
