almond milk (or any milk of your choice)

apples, peeled and chopped (preferably Granny Smith for tartness)

maple syrup or honey

baking powder

chopped walnuts or pecans (optional)

raisins or dried cranberries (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Mix well.
In another bowl, whisk together the almond milk, maple syrup (or honey), and vanilla extract.
Add the chopped apples to the dry oat mixture, then pour in the wet ingredients. Stir until everything is well combined.
If using, fold in the chopped nuts and dried fruit.
Grease a 9x9 inch baking dish (or similar size) with a little oil or cooking spray. Pour the oatmeal mixture into the dish, spreading it evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden and firm to the touch.
Once baked, remove from the oven and let it cool slightly before slicing.
Notes
Serve warm, drizzled with extra maple syrup and garnished with fresh apple slices and yogurt.
