Instructions
In a mixing bowl, combine the olive oil, lime juice, minced garlic, chopped cilantro, chili powder, cumin, salt, and pepper. Stir well to create a marinade.
Add the peeled and deveined shrimp to the marinade, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
Preheat the grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water to prevent burning.
Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
Place the skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Be careful not to overcook them, as they can become rubbery.
Remove the skewers from the grill and serve immediately with lime wedges on the side for squeezing over the shrimp.
