Preheat your oven to 350°F (175°C). Slice each date lengthwise without cutting all the way through to create a pocket.
Gently open each date and place 2-3 pecan halves inside, pressing them together slightly to secure.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.
Line a baking sheet with parchment paper. Using a fork or toothpick, dip each stuffed date into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.
Place the chocolate-covered dates on the prepared baking sheet. While they are still warm, sprinkle a touch of sea salt over each turtle for a sweet-salty contrast.
Refrigerate the dates for about 20-30 minutes, or until the chocolate is completely set.
Once set, transfer the turtles to a serving platter. Enjoy immediately or store them in an airtight container in the fridge for up to a week.
