Caramelize the Onions: In a large skillet over medium heat, add the butter and olive oil. Once melted, add the thinly sliced onions. Cook, stirring occasionally, for about 20-25 minutes until they are soft and golden brown. Season lightly with salt to enhance the sweetness.
Prepare the Patties: While the onions are cooking, divide the ground beef into four equal portions. Gently shape each portion into a patty, about ¾ inch thick. Use your thumb to make a small indentation in the center of each patty; this helps them stay flat as they cook. Season both sides with salt and pepper.
Cook the Patties: In a separate skillet or grill over medium-high heat, add the burger patties. Cook for about 4-5 minutes on one side until browned, then flip the patties.
Add Cheese: After flipping the patties, place a slice of Swiss cheese on each patty and cover the skillet with a lid. Cook for an additional 3-4 minutes, or until the cheese has melted and the burger is cooked to your desired doneness.
Toast the Buns: While the burgers are finishing, lightly toast the burger buns on another skillet or under the broiler until golden brown.
Assemble the Burgers: On the bottom half of each bun, spread a thin layer of Dijon mustard if using. Place the cooked patty with melted Swiss cheese on top. Add a generous helping of caramelized onions followed by fresh arugula or lettuce if desired. Top with the other half of the bun.
