In the same skillet, add the remaining butter and sliced bananas. Cook for about 2-3 minutes, allowing the bananas to caramelize until golden brown and tender.
To serve, place two slices of french toast on a plate, top with a generous portion of caramelized bananas, and drizzle with maple syrup. Garnish with fresh mint leaves if desired.
