Instructions
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
Add minced garlic to the skillet and cook for an additional minute until fragrant.
Season the shrimp with Cajun seasoning, salt, and pepper. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
Stir in the heavy cream and diced tomatoes, simmering for 2-3 minutes to combine the flavors.
Gently fold in the cooked penne pasta and half of the cheddar cheese into the skillet mixture.
Transfer the combined mixture into a greased baking dish, spreading it evenly.
Top with the remaining cheddar cheese and sprinkle with Parmesan.
Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley.
