Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large bowl, use a hand mixer to beat the softened cream cheese until smooth. Add the eggs, milk, sugar, vanilla extract, and ground cinnamon, blending until fully combined.
Gently fold in the cubed brioche bread and fresh blueberries, making sure the bread is evenly coated with the mixture.
Spread the bread and blueberry mixture into the prepared baking dish, ensuring an even layer.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15–20 minutes, or until the top is golden brown and the center is set.
Once baked, let the casserole cool for about 10 minutes.
In the meantime, prepare to serve by placing a dollop of Greek yogurt on each plate, followed by a serving of the Blueberry Cheesecake French Toast Casserole.
Dust with powdered sugar and garnish with fresh mint leaves for a touch of elegance.
