Instructions
Prepare the Berries: Rinse the mixed berries under cold water. If using strawberries, hull and slice them. Pat the berries dry with a paper towel and set aside.
Sweeten the Yogurt: In a medium bowl, combine the Greek yogurt with honey or maple syrup (if using) and the vanilla extract. Stir until smooth and well combined.
Layer the Parfait: In individual serving glasses or bowls, start with a layer of the sweetened yogurt (approximately 1/3 cup).
Add Berries and Granola: On top of the yogurt layer, add a spoonful of mixed berries followed by a layer of granola. Repeat the layers until the glasses are filled, finishing with a layer of berries on top.
Garnish: Top the parfaits with a few additional berries and a sprig of fresh mint for a touch of freshness and color.
Chill and Serve: Allow the parfaits to chill in the refrigerator for about 10-15 minutes before serving to let the flavors meld together.
