Instructions
Preheat your oven to 450°F (232°C).
In a bowl, combine the shredded chicken with barbecue sauce. Mix well, ensuring the chicken is fully coated.
Place the flatbreads on a baking sheet lined with parchment paper or lightly greased.
Brush the flatbread lightly with olive oil to enhance crispiness.
Evenly spread the BBQ chicken mixture on both flatbreads.
Scatter the shredded mozzarella cheese over the chicken.
Top with sliced red onion, corn kernels, and halved cherry tomatoes.
Season with salt and pepper to taste. If desired, add jalapeño slices for an extra kick.
Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
Once out of the oven, sprinkle fresh cilantro on top for a burst of flavor and color.
Slice the flatbreads into pieces and serve hot.
Notes
Add jalapeño slices for extra heat if desired.
