In a large mixing bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and ground nutmeg until well combined.
Add the cubed challah or brioche bread to the egg mixture, making sure all the pieces are coated evenly. Let it sit for about 10-15 minutes to absorb the liquid.
Gently fold in the sliced apples and apple pie filling. If desired, sprinkle in the chopped pecans for added texture and flavor.
Pour the entire mixture into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 45-50 minutes or until the casserole is set in the center and golden brown on top. You can check for doneness by inserting a knife into the middle; it should come out clean.
Once done, remove the casserole from the oven and let it cool slightly before serving.
Notes
Dust the casserole with powdered sugar before serving. Optionally, serve warm slices garnished with additional apple slices or a drizzle of maple syrup for a delightful finishing touch.
